Purple garlic has a generally milder taste and scent, with larger cloves which retains their flavour for longer than the White Garlic. Theorganic pigment "anthocyanidin" is responsible for the "purple coloration". Thesecloves are surrounded with a thick and stiff 'neck' with purple stripes.Grown in the upper hills ofHimachal Pradesh, it gets the Purple color only when the whole environment, air and water, is organic.
